Gancedo Bodegas y Vinedos

Is a traditional winery located in Quilos, Cacabelos, in D. O. Bierzo. This project promotes the recovery of ancient vineyards to produce quality wines from Mencía, Godello, Doña Blanca, Garnacha Tintorera and Malvasía grapes. Sustainable and integrated respect for the environment is encouraged, with a traditional and organic viticulture but relying on technological advances to create innovative wines that represent the peculiarities of the varieties of the area. The vineyards, planted more than 60 years ago, cultivated with traditional dry farmed viticulture and low production in order to ensure great quality of the harvest. Around September when the grapes are in their optimum ripeness, the harvest begins, which is done by hand in 20 kg boxes to guarantee the good condition of the clusters from the vineyard to the winery. The white wines winemaking process starts with cold press and fermentation on lees in stainless steel tanks and French oak barrels of 500 and 600 liters. Once is fermented, the wine ages with its lees from two to nine months. Rose wines, like white wines, are cold pressed for a greater extraction of aromas and flavors characteristics of the varieties used and continues with a fermentation in stainless steel tanks. On the other hand, red wines are produced with a maceration that provides the wine with the colors and aromas of this variety. The fermentation is produced in stainless steel tanks and open top fermenters of 3000 kg of capacity. The aging of this wine takes place in French oak barrels of 225 liters for a period of six to twelve months.
